THINGS ABOUT STIR-FRY THAT SCIENCE CAN'T EXPLAIN



1. How it can be so great for you... and taste good!

2. Mixing up weird veggies that normally no one eats... and they taste good!

    3. The veggies still contain a lot of its nutrients after cooking... and they still taste good!

Le Ginger Turkey Stir-Fry Stack

Pan-grill until well-done 1 medium (4 1/2-ounce, about 93 percent lean) ground turkey patty, mixed with 1 teaspoon each soy sauce andfreshly grated ginger.

Place on a 1/2-cup bed of cooked whole-wheat couscous. Stir-fry 1/2 cup each cauliflower florets, bok choy, and cremini mushrooms in 2 teaspoons peanut oil and 1 teaspoon freshly grated ginger.

Sprinkle mixture with 1 teaspoon toasted sesame seeds, and place on top of turkey. Garnish with sliced fresh scallion, and serve with 1/2 teaspoon each soy sauce and Sriracha (Thai chili-garlic sauce).

I was missing some of the key ingredients like peanut oil but I just substituted it with sesame oil (good.stuff.). And I could not find the ginger root that I bought but I remembered that my mom had a seasoning with a gingerbread man on it so I used that... and it turned out tasty...so I guess that's good. :D And I wasn't exactly sure where to find Sriracha... but a lady at H-E-B helped me find it so I thought it might be useful for some to know... its on the international food aisle. It has a picture of a rooster on it so my family calls it the "Rooster Sauce." It's become a favorite. I highly recommend it for those who can handle hot spicy foods.

Such a big hit with my family... they all rated it 9/10** except for my brother (he ruined the rating just so ya know) who rated it a measly 8 making the rating an 8.8. (which rounds up to a 9, I guess. (;)

Mediterranean Party!


Fusilli Pasta Salad

Health.com recipe
Serves: 1 [Just multiply ingredient amounts X (however many servings you need)]
Toss 3/4 cup cooked whole-grain fusilli or radiatore pasta with 1 teaspoon olive oil.

Mix pasta with 1 ounce chopped prosciutto or American country ham, 1/2 cup canned, water-packed artichoke hearts (drained and sliced), 1/3 cup each chopped broccoli florets and yellow or orange bell pepper, 2 tablespoons each chopped red onion and thinly sliced fresh basil, 1 1/2 tablespoons white wine vinegar, 2 teaspoons olive oil, 1/4 cup chopped plum tomatoes, and a pinch each of, sea salt, black pepper, and fresh minced oregano.
Family rating: 7/10* 
Very refreshing salad... Will be making this again!

A Different Kind of Burger

Sizzlin' Portobello Burger
Due to the fact not all my family was willing to substitute mushrooms for hamburger meat, I only used half of what I normally would make for this recipe. Brush 3 large portobello mushroom caps each with 2 teaspoons olive oil and grill. Top 1 grilled (2-ounce) whole-grain burger bun for each mushroom cap, 2 tablespoons tzatziki sauce each, and 4 thin slices each vine-ripened tomato, white onion, and cucumber each. add a dash of curry powder to 1 cup grilled seedless grapes and serve on side. Make 3 plain, boring hamburger patties for everyone else... just kidding :P

Also, for additional condiments I sauteed mushrooms and onions.
Cut up white onion into slivers

Add and cut up portobello mushrooms

Add olive oil

Spray pam

Begin to sauté

Finished! :D


Despite the onions making me cry, it was a fairly easy process. Plus, it made the kitchen smell GREAT :D
Cutting tomatoes is harder than it looks! I made some pretty ugly ones like the one I'm holding above. Then I just eat the ones that I've messed up... :O Yum!!

For the main entree, I just have to grill the portobello "burgers" and the other normal patties. Fortunately, my dad will be back from voting for the Republican Primary soon and he'll be able to teach me how to grill 'em ;D

Now since it is Summer time.... I thought grilled red grapes might be a nice addition to the burgers.
I just added a few dashes of curry powder to a few cups grilled red seedless grapes which I used olive oil to grill.
Family rated burgers: 7.5/10* Very good
Family rated grapes: 2/10* Not very good at all.
Will be making burgers again but not the grapes! :P
